Cream of Broccoli Soup: Perfect for This Fall Eve.

Dinner. October 17, 2010 4:30 P.M.

I whipped something up quick for dinner on my way out the door to work at the hospital. I had to switch with my wife who has been working at the hospital all day, and I didn’t want her to come home from a long day at work to have to cook a meal.

First step: finely chop a medium onion.

Next: Sauté the chopped onions in butter over medium heat until they are soft and translucent.

Add two cups chopped frozen broccoli and cook for about five minutes.

Add two cups chicken broth and cook another five minutes.

Blend with broccoli mixture with an immersion blender until it is smooth.

If you don’t have an immersion blender you can transfer the broccoli mixture to a regular blender then transfer it back to the pot. I actually prefer this method, because I think it works better.
Last step is to mix in the 1/2 & 1/2 the serve and enjoy.
