Yummy Corn Chowder

This is one of our favorite recipes. In fact, it might sometimes be too much our favorite, because we get sick of it when we eat it too much. The best thing about it, besides that it tastes great, is that it is super easy to make.


1 medium onion, chopped

1 tablespoon butter or bacon drippings (which ever you  prefer)

3 large potatoes, cubed

1 teaspoon kosher salt

Water to cover by 1/2 inch

1 16 oz. bag of frozen corn

1 can evaporated milk

Pepper to taste


Chop your onions.

Melt butter or bacon drippings in bottom of 13 qt. pan over medium heat.

Add onions to pot.

Sauté until translucent.

Cube your potatoes.

Add to the pot, and let it cook for about 5 minutes.

Let your dog hang out on the kitchen floor while you cook.

Add one teaspoon kosher salt.

Add enough water to cover by 1/2 inch.

Let it cook for 20 minutes.

Let it cook down for about 10 minutes. Add corn.

Add evaporated milk, stir, pepper to taste.
