1 cup flour
(Plus another 2 tablespoons for when you roll the dough.)
2 large eggs
1/4 teaspoon salt
(Plus another teaspoon to go into the boiling water)
1 teaspoon skim milk
Add flour to bowl.
Stir in salt.
In a separate bowl, lightly beat the eggs.
Mix in milk.
Form a well in the flour.
Add egg mixture.
Incorporate egg into the flour with a fork.

Flour a surface with two tablespoons flour, form a ball with the dough and place it on the flour..
Knead the dough until the flour is incorporated by it.
Spread more flour on the working surface and pat the dough flat. Sprinkle four on the top of it to prevent it from sticking to the rolling pin.
Roll it as thin as possible. It usually sticks to the working surface and I have to pry it up with a metal spatula and re-flour, then continue until done.
I use a pizza cutter to cut the dough into strips.
McCann likes to cut his pasta thick.
I like to cut mine thin.
Here is what my dough looks like when I am done cutting.
Boil in water for 3-4 minutes (add 1 teaspoon salt to the water) and then serve with your favorite sauce.
Or you can serve it with butter, salt and parsley flakes. I did that with McCann's thickly cut noodles.
