Apparently meatballs are all the rage now days, so I ventured into the creating a spaghetti with meatballs recipe.

Bill Phillips is the famous author of Body For Life weight loss/ body building system). I have used Phillip's recipe for years but wanted to try something new. (The sauce is my own making.)
INGREDIENTS FOR MEATBALLS:
1/2 lb. ground beef
1/2 lb. ground pork
1 large egg
1/2 cup grated Parmesan cheese.
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
2 teaspoons minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup bread crumbs
1 cup water
1 cup olive oil
INGREDIENTS FOR MARINARA SAUCE:
1 1/2 tablespoons olive oil
3 tablespoons garlic
1 large floret cauliflower finely chopped
1 carrot finely chopped
1/2 medium onion finely chopped
1 tablespoon worsheshire sauce
1 tablespoon balsamic vinegar
1-8 oz. can tomato sauce
1-6 oz. can tomato paste
1 15 oz can diced tomatoes
2 tablespoons apple juice
2 tablespoons red wine vinegar
1/4 cup beef broth
1/2 cup heavy cream
Add ground beef, ground pork, egg, Parmesan cheese, parsley, basil, garlic, salt and pepper to mixing bowl.
Mix on low with stand mixer until well combined It will look like this when it is done. (Or mix by hand. That will work too.)
Next mix in bread crumbs. I use the Italian style.
Next mix in 1 cup of water (half a cup at a time) so that meat is moist.
Cover and set in the fridge while you make the marinara sauce.
To make the Marinara sauce, chop your onions.
Chop your carrots.
Chop your cauliflower. (I normally use celery, but I was out. So, I used cauliflower instead. Will this work? I guess we will see.)
Heat oil and butter in large pot.
Sauté onions, garlic, carrots and cauliflower until soft.
Add remaining ingredients (except cream) and cook until heated.
To make it smooth, blend it in a blender. You will need to do it in 2 or 3 batches.
I put each batch in a bowl when I am done then pour it all back into the pot and mix in cream.
Now back to the meat balls. Heat 1 cup olive oil in large pot.
Roll meat mixture into large balls. About 2 1/2 to 3 1/2 inches in diameter.
Cook in hot oil turning as each side in browned. Once all sides are cooked, add meatballs to marinara sauce.
Serve on thin spaghetti or pasta of your choice.
