3/4 peanut butter (I like to use the crunchy variety)
1 stick butter (not margarine)
1 1/4 cup packed brown sugar
3 tablespoons heavy cream or 1/2 and 1/2
1 tablespoon vanilla
1 large egg
1 3/4 cup flour
3/4 teaspoon salt
1/2 to 3/4 teaspoon baking soda
Today Ben and Seth hung out at our house while their parents went to a concert. Here they are with Lily. While they were here, we decided to make peanut butter cookies.
To make the cookies, you'll need a mixer with this attachment (or you can mix it by hand. That works too.)
First thing you do is preheat the oven at 375 degrees. Then add 3/4 cup peanut butter to the bowl.
Then add one stick butter.
Then 1 1/4 cups firmly packed brown sugar.
Then 1 tablespoon vanilla.
Then mix it thoroughly on medium speed.
Then add one large egg.
Oops! We forgot to add the 3 tablespoons heavy cream earlier. We will do it with the eggs and it will be just fine.
Now mix again on medium until well combined.
Now add 1 3/4 cup flour.
And 3/4 teaspoon salt.
And 3/4 teaspoon baking soda.
Now mix again until combined.
Seth was the only one that wanted to lick the beater, but...
when the other boys saw how good it looked they joined in.
Using a cookie scoop or a tablespoon, plop dough onto a cookie sheet.
Then make criss cross patterns on the dough with a fork. After that put them in the oven for 8 minutes.
While they were cooking, we ran next door and bought lemon aid from Thatcher who was selling it in front of his house.
Look at how fresh that lemon aid looks.
We were sorry to hear that Thatcher's dog, Boston, got hit by a car the other night. He now has this stuffed dog that look just like Boston.
We came back and pulled the cookies out of the oven. As you can see, the boys wanted to make double cookies.
